Wagyu beef is farmed from specific Wagyu livestock. Wagyu beef is genetically unique. It has a genetic predisposition to create a crazy marbling of fat on the inside of the animal’s muscle tissue. No other livestock does that.” Think of your average piece of steak. Chances are, it’ll have a fat cap on its outside. With wagyu, the cow metabolizes the fat internally, so it’s integrated within the muscle.
Wagyu beef is a rich, luscious cut of beef that practically dissolves once it hits your tongue, it makes the perfect mince to make the perfect burger. We use high-end wagyu therefore we don’t want to overcook it so when you take a bite it melts in your mouth.
Recent research has identified Wagyu as a great source of essential vitamins and nutrients, while it is also high in unsaturated (healthy) fats, including Omega 6 and 3 oils.
Wagyu beef also contains more conjugated linoleic acid (CLA) per gram than any other foodstuff - 30 per cent more than other beef breeds. CLA is a fatty acid with potent anti-carcinogenic properties, as well as being an anti-inflammatory agent.
It is believed that Wagyu has the potential to reduce heart disease, diabetes, asthma, Alzheimer's, reduce body fat gain and increase immune response.
Dr Tim Crowe, a dietitian and lecturer at Deakin University (Exercise and Nutrition Science), says the mono-unsaturated to saturated fats ratio is higher in wagyu beef than any other beef breed.
"But even saturated fat contained in Wagyu is different," Dr Crowe said. "Forty per cent is in a version called stearic acid, which is regarded as having minimal impact in raising cholesterol levels. So really, the profile of marbled Wagyu beef is more beneficial to human health. It can be described as a healthier type of meat."
